Kitchen Grease: Why Degreasers Are Alkaline and Dish Soap Is Not Enough

Dish soap handles a greasy plate in seconds and then fails completely on the sticky brown film above a stove. That is not a quality problem. It is a chemistry problem, and it comes down to the difference between lifting grease and chemically converting it. Kitchen degreasers are alkaline on purpose, and understanding why explains both what they can do and what they will damage.

Kitchen grease is not one substance

Fresh cooking grease is mostly triglycerides, fat molecules that are liquid when warm and waxy when cool. On a plate, that is all you are dealing with, and it comes off easily.

The film on a range hood, a cabinet door above the cooktop, or a backsplash is a different material. Airborne grease droplets land, cool, collect dust, and then sit through repeated heating cycles. Over months the fats oxidize and cross link into a polymerized layer that behaves more like a soft varnish than like oil. It is no longer simply greasy, it is a coating that has partly bonded to the surface. That is why a cloth and dish soap slide across it without result.

Two mechanisms: emulsification and saponification

Dish soap works by emulsification. Its surfactants have a water loving end and an oil loving end, so they surround grease droplets and hold them in suspension until water rinses them away. The grease itself is unchanged, it is just carried off. This works beautifully on fresh, soft grease and it is gentle enough for daily use on dishes, which is why formulas like Dawn Ultra dish soap and Palmolive dish soap are built around surfactant concentration rather than pH.

Alkaline degreasers add a second mechanism. At high pH, an alkali reacts with fat and converts part of it into a soap, a process called saponification. The degreaser is not carrying the grease away, it is turning the grease into something water soluble on the spot. That reaction is what cuts through a polymerized film, and it is the reason a heavy duty cleaner can dissolve a layer that surfactants alone cannot move.

Why a stronger dish soap is not the answer

Increasing surfactant concentration makes an emulsifier better at emulsifying. It does not give it a mechanism it does not have. Doubling the dish soap on a hood filter produces more suds and the same result. Spray formats such as the Dawn Powerwash refill improve contact and coverage, which genuinely helps on dishes and lightly soiled surfaces, but the underlying chemistry is still emulsification. Where each product belongs

Dish soap belongs at the sink, on cookware, and on light kitchen soil that has not baked on. A degreaser belongs on the hood, the filter, the backsplash, the top of the refrigerator, the cabinet faces around the cooktop, and outdoor cooking equipment.

Products in this class are usually sold either as concentrates or as heavy duty ready to use sprays. What alkaline degreasers damage

The mechanism that makes a degreaser effective is also its risk profile. High pH attacks materials that are themselves vulnerable to alkali.

  • Aluminum. Raw, cast and anodized aluminum darken, chalk or pit on contact with strong alkali. Hood filters, cookware, trim and window frames are common casualties, and the damage is not reversible.
  • Unsealed and oiled wood. Alkaline cleaners raise grain, strip oil finishes and can darken tannin rich species such as oak.
  • Painted and powder coated surfaces. Some paint films soften. Gloss can be dulled even where the film survives.
  • Natural stone and its sealer. A stone counter next to a cooktop is usually the nearest thing a degreaser can ruin.

The container carries the manufacturer’s list of surfaces to avoid. Where a listing does not publish active ingredients or pH, that list on the bottle is the only reliable guidance, and it should be read before the first application rather than after a problem appears.

Mechanical help, and what it costs the surface

Chemistry that has softened a film still needs something to carry it off. The choice of pad is a choice about how much of the surface goes with it. Steel wool such as Brillo steel wool scrub pads removes heavy deposits from cast iron, oven racks and grill grates, and it will also scratch stainless, glass cooktops, enamel and any coated cookware. Non scratch mesh pads such as the Blulu plastic dish scrubbers are the right choice on anything with a finish worth keeping.

The general rule is to let the product dwell longer rather than scrub harder. Time is free and does not leave marks.

Using a degreaser correctly and safely

Ventilate the kitchen. Alkaline aerosols and mists are irritating to eyes and airways, and a kitchen with the range hood running and a window open is a very different environment from a closed one. Wear gloves, because a product that saponifies fat does not distinguish between grease on a hood and oil on skin. Wear eye protection when spraying anything overhead, which is where hood and cabinet work puts you.

Never combine products. A degreaser must not be mixed with a bleach based cleaner, and no cleaner should be sprayed over the wet residue of a different one. Mixing bleach with an ammonia containing cleaner produces chloramine gas, and mixing bleach with an acidic product produces chlorine gas. Rinse and dry a surface before changing products.

Do not apply a degreaser to a hot surface. It flashes off, concentrates unevenly and puts vapor straight into the room. Let the cooktop, oven or grill cool first. Finally, any surface that touches food should be rinsed with clean water after a degreaser has been used on it, whatever the label says about residue, and dried afterward.

What it costs over time

Concentrates and ready to use sprays have different cost structures rather than different prices. A concentrate is bought once and diluted many times, and the same jug covers heavy jobs at full strength and routine wiping at a weak dilution. A ready to use spray removes the mixing step and the measuring error, and it is the sensible choice for a household that will only use it occasionally. The waste in the ready to use format is water and packaging. The waste in the concentrate format is the portion mixed too strong for the job in front of it.

The short version

Use dish soap for fresh grease and dishes. Use an alkaline degreaser for the baked on film that dish soap cannot chemically address. Check the surface list on the container before the degreaser goes near aluminum, bare wood, paint or stone. Give the product its dwell time instead of scrubbing, ventilate, wear gloves, and never mix anything with anything.
